
The Mediterranean taste and aroma make their best in the Ibiza products that their people transform into delicious and simple dishes. You should not leave the island without tasting the great gastronomic variety that it offers.
Farm meat (pork, lamb, baby goats, rabbit, chicken, cow, pigeon) are served stewed, grilled or flambéed. For instance pigeons with cabagge, sofrit pages. The sobrasada (Spicy pork sausage), butifarra or butifarró (white pudding) and goat or sheep cheeses are also really yummy.
Fish, the pleasure of the Mediterranean, is also served stewed, grilled or oven-cooked. We strongly recommend Bullit de peix, Burrida de rajtada, peix amb salsa verde, raons frits, peix al forn, frit de polp, calamars… The fishes we usually find in the market or in the restaurants are serrans, roja, mero, sirvia, raons, vaques, sargos, octopus, calamars… One of the most tasteful specialities of the island is el peix sec, salty fish, dried when raw and slightly grilled before being served with a salad.
In this island there is also seafood, not a huge variety though, but who would dare to say no to a lobster or cranca stew, or a lobster paella.
Rices mixed with fish make paellas, seafood rice, rice with fishy taste or black rice. Or with meat: rice from the slaughtering.
As dessert you can choose from a wide range of fruit of the seasons: melon, watermelon, oranges with wine and sugar, dry figs with almonds… or typical sweets as the bunyols, orelletes, graixonera, flaó, bread with wine and sugar.
All of these delicacies must be served together with a good payés wine, elaborated in the island. There are several wine cellars who produce good wine and still nowadays, in some residence they prepare their own for in-house consume. But to be able to rest such a feast, do not leave the island without trying Ibiza herbs, el palo, la frígola or the absinthe, liquors elaborated from aromatic and digestive herbs.
